We use American Beef that's top-quality round steak.
First it is "Stripped Out with the Grain." It is then soaked in brine with the recipe and then hung on a hook vertically. This is called "Hung Jerky." It is then smoked, using real hickory wood. It is "Real Hickory-Wood Smoked." It is a shelf-stable product. No refrigeration is required. It's better if not refrigerated. Keep it at room temperature.
Texture and Flavor
It has good texture. If you bite the product straight on, you can use the "head snap" technique. If you go with the grain, the product strips lengthwise. The flavors are Smoky and Salty. The Black Label variety is soy-sauce based. Original is garlic-flavored. Peppered is the Black Label flavor with black pepper. They are all hickory-wood smoked.
